Paprika Lime Pork Chop Loin

Ingredients

Pork Chops
  • 4 pork loin chops
  • 2 tablespoons olive oil
  • 1 tablespoon paprika
  • 1 teaspoon ground cumin (optional)
  • Zest and juice of 1 lime
  • Salt to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix together olive oil, paprika, cumin, lime zest, lime juice, and salt.
  3. Rub the spice mixture evenly over both sides of the pork loin chops.
  4. Heat a skillet over medium-high heat. Add a little olive oil.
  5. Sear the pork chops for 2-3 minutes on each side until browned.
  6. Transfer the skillet to the preheated oven and cook for about 10-12 minutes, or until the pork reaches an internal temperature of 145°F (63°C).
  7. Once cooked, remove from the oven and let it rest for a few minutes before serving.
Mango, Cilantro, Radish Salsa:
  1. 1 ripe mango, cubed
  2. 1/2 cup chopped cilantro leaves
  3. 3-4 radishes, cubed
  4. Salt to taste
  1. In a bowl, combine mango, chopped cilantro, radishes, lime juice and salt.
  2. Toss gently to combine. Set aside to let the flavors meld while you prepare the rest of the meal.
