Paprika Lime Pork Chop Loin
Ingredients
Pork Chops
- 4 pork loin chops
- 2 tablespoons olive oil
- 1 tablespoon paprika
- 1 teaspoon ground cumin (optional)
- Zest and juice of 1 lime
- Salt to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a small bowl, mix together olive oil, paprika, cumin, lime zest, lime juice, and salt.
- Rub the spice mixture evenly over both sides of the pork loin chops.
- Heat a skillet over medium-high heat. Add a little olive oil.
- Sear the pork chops for 2-3 minutes on each side until browned.
- Transfer the skillet to the preheated oven and cook for about 10-12 minutes, or until the pork reaches an internal temperature of 145°F (63°C).
- Once cooked, remove from the oven and let it rest for a few minutes before serving.
Mango, Cilantro, Radish Salsa:
- 1 ripe mango, cubed
- 1/2 cup chopped cilantro leaves
- 3-4 radishes, cubed
- Salt to taste
- In a bowl, combine mango, chopped cilantro, radishes, lime juice and salt.
- Toss gently to combine. Set aside to let the flavors meld while you prepare the rest of the meal.
