Sweet Potato Red Lentil Soup

This Red Lentil Sweet Potato Soup is a delicious and hearty soup that is perfect for a cozy night in or a cold winter day. This soup is packed with healthy ingredients, including red lentils, sweet potatoes, celery, and carrots. The lentils and vegetables are simmered in a flavorful broth made with Better Than Bouillon Organic Chicken Base, which adds a rich and savory taste to the soup.

To make the soup, start by sautéing the sweet potato, celery, and carrots in a large pot with olive oil. This step allows the vegetables to cook slightly and develop a deeper flavor. Then, add the red lentils, water, and chicken base to the pot and bring to a boil. Simmer the soup until the lentils and vegetables are tender, which takes about 20-25 minutes. Finally, add the kale and parsley and cook for an additional 5 minutes, until the kale is wilted.

The soup is finished with a sprinkle of Trader Joe's Dukkah seasoning, which adds a warm and nutty flavor to the dish. This soup is a comforting and healthy meal that is perfect for lunch or dinner.
